I want software that lets me know what my kids have been checking out online as well as ban some sites from being seen. What is the best one available that you would recommend?

I can't suggest any as I haven't used any myself, but I will now make sure to check into some of these and install them when my children get to the age of using computers. Thanks for sharing.
Also, I suspect most kids wouldn't know to delete their search history, so I would just check the browser history if and when my kids start using the interwebz.
