If you are going to create a nulti language site in my opinnion there is only one plugin that is serious: WPML!

You can handle every aspect of translation with this plugin. It is professionally coded, it works like a charm and there is really no alternative to any serious translation.

Of course you can use one of the free plugins (such as PolyLang - which probably is one of the best free plugins) but if you really mean business there is only WPML.
